Chicken Skin Salad

  • the skin from 4 chicken thighs, left intact but removed from meat
  • sea salt
  • cracked pepper
  • chili flakes
  • 3 tbsp sesame seeds
  • the juice of half a lemon
  • 2 tbsp rice vinegar
  • 1/2 tsp sugar
  • 1 tbsp soy sauce
  • 1/4 cup peanut oil
  • 3 radishes, slices
  • romaine lettuce, washed, torn
  1. Toast the sesame seeds in a skillet and then set aside.
  2. Combine the cooled seeds with the lemon, vinegar, sugar, soy sauce, and peanut oil.  Set aside.
  3. Divide the lettuce and radishes between bowls.  Place in the fridge.
  4. Heat a skillet and lay down the chicken skin.  Season on both sides with salt, pepper, and chili flakes.  Cook flipping, pressing down with a metal spatula until crisp.
  5. Drain on paper towel.
  6. While warm slice. Arrange over the salad.  Mix the dressing well and drizzle on top.  Serve.

1000 Island Dressing

  • 1/3 cup mayonnaise
  • 1 hard boiled egg, peeled, mashed
  • 1 tbsp milk
  • 1/2 tbsp ketchup
  • 1 tsp capers
  • 1 pickle, minced
  • salt
  • cayenne

Mix well and season to taste.  Serve over mixed greens.

1000 Island Dressing

  • 1/4 cup mayonnaise
  • 1/4 cup plain yogurt
  • 1/4 cup hot salsa
  • 1/2 tsp worcestershire sauce
  • sea salt and cracked pepper

Combine all the ingredients and mix well.  Serve over mixed greens.

Dijon Dressing

  • 2 tbsp olive oil
  • the juice of half a lemon
  • 1 tbsp dry sherry
  • 2 tsp coarse grained dijon
  • 2 tbsp heavy cream
  • sea salt and cracked pepper

Combine all the ingredients.  Season to taste.  Toss with Salad

Japanese Vinaigrette

  • 3 tbsp rice vinegar
  • 1 scallion, minced
  • 1/2 tsp sugar
  • 1 tbsp sesame oil
  • sea salt
  • cracked pepper
  1. Combine all the ingredients.  Season to taste.  Serve on a salad.

Southwest Salad Dressing

  • 2 tbsp mayonnaise
  • 1 tbsp vodka
  • the juice of half a lime
  • 1 tsp worcestershire sauce
  • 1/4 tsp tabasco
  • 10 tbsp olive oil
  • 1/2 tsp ground cumin
  • 1/2 tsp chili powder
  • sea salt and cracked pepper

Mix well and serve over salad.

Sesame Vinaigrette

  • 1 tbsp soy sauce
  • 1 tbsp worcestershire sauce
  • 1 tsp sesame oil
  • 2 tbsp olive oil
  • 1 tbsp rice wine vinegar
  • 1 tbsp balsamic vinegar
  • 1/2 tsp garlic powder
  • 1/4 tsp sugar
  • 1/2 tsp spicy mustard
  • cracked pepper

Combine all the ingredients.  Shake well.  Serve over lettuce.

Parmesan Vinaigrette

  • 1/4 cup red wine vinegar
  • 1/4 cup grated parmesan
  • 3 tbsp water
  • 2 tsp dijon
  • 1/2 tsp sugar
  • 3/4 tsp salt
  • 1 garlic clove, minced
  • 2/3 cup olive oil

Mix all the ingredients together well.  Serve on salad.

Lemon Cream Salad Dressing

  • 1 tbsp mustard
  • 1 1/2 tbsp water
  • 1/2 tsp sugar
  • the juice of 1 lemon
  • 1/3 cup olive oil
  • 1/4 cup sour cream
  • kosher salt
  • cracked pepper
  1. Combine all the ingredients and mix well.  Serve over salad.

Dijon Vinaigrette

  • 1/2 tbsp dijon
  • 1/2 tsp garlic powder
  • 1/4 tsp sugar
  • 2 tbsp water
  • 1/3 cup red wine vinegar
  • 1 tsp worcestershire sauce
  • kosher salt
  • cracked pepper
  • 1/4 cup olive oil
  • 3/4 cup canola oil

Combine all the ingredients and mix well.  Toss with salad.
