<li>2 chicken breasts</li>
<li>1 slice bacon, diced</li>
<li>1 shallot, minced</li>
<li>3 tbsp cider vinegar</li>
<li>2 tbsp dijon</li>
<li>1 tbsp heavy cream</li>
<li>2 tsp worcestershire sauce</li>
</ul>
<ol>
<li>Combine 1/4 cup of coffee, 2 tbsp salt, 2 tbsp brown sugar, and whisk until dissolved.</li>
<li>Stir in the water, lemon, peppercorns, mustard, coriander, and cool to room temperature.</li>
<li>Pour into a large ziploc bag and add 2 chicken breasts.&nbsp; Chill 3 hours.</li>
<li>Drain, dry the breasts, and discard the brine.&nbsp; Grill the chicken until cooked.</li>
<li>Meanwhile, saute the the bacon in a saucepan 2 minutes.&nbsp; Add the shallot and saute 3 minutes.</li>
<li>Stir in 3 tbsp coffee, and the vinegar.&nbsp; Bring to a boil and then stir in the dijon, cream, and worcestershire sauce.&nbsp; Simmer 5 minutes.</li>
<li>Check the seasoning of the sauce.</li>
<li>Serve the chicken with the sauce.</li>

<li>Preheat the oven to 350 F. Place 2 long sheets of aluminum foil on 2 baking trays.&nbsp; Lay a rack of ribs on each and twist up the sides of the foil to form a bowl like structure.</li>
<li>Pour half the pineapple juice over each.</li>
<li>Close the foil tightly and bake 1 hour.&nbsp;</li>
<li>Combine the remaining ingredients in a bowl and mix well.</li>
<li>Remove the ribs from the oven and heat the grill or two large skillets.&nbsp; Remove the tin foil.</li>
<li>Grill or pan fry the racks, basting with the glaze until browned well.</li>

<li>2 steaks</li>
</ul>
<ol>
<li>&nbsp;Melt the butter in a saucepan with the shallot and the garlic. Saute 4 minutes. Add the tomatoes, ketchup, water, dijon, sugar, and tamarind.</li>
<li>Stir in the cayenne, chile powder, paprika. Season to taste with salt and pepper. Simmer 15 minutes.</li>
<li>Puree the sauce in a blender until smooth. Return to the saucepan and simmer 20 minutes more.</li>
<li>Heat the grill.&nbsp; Brush the steaks with olive oil and then rub with salt and pepper.</li>
<li>Remove about 1 cup of the sauce to baste with.&nbsp; Grill the steaks, basting with the reserved sauce.</li>
