Oreo Cupcakes

  • 1 2/3 cups flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup butter, softened
  • 1 cup sugar
  • 2 eggs
  • 1 tsp vanilla
  • 3/4 cup milk
  • enough oreos to make 1 cup crushed
  1. Preheat the oven to 350 F.
  2. Combine the flour, baking powder, and salt.
  3. Cream the butter with the sugar and then beat in the eggs and vanilla.
  4. Stir in the flour mixture and the milk.
  5. Crush enough whole oreos to make 1 cup and then fold them in.
  6. Spoon into a cuplined muffin tray.
  7. Bake about 25 minutes.

Chocolate Chip Peanut Butter Muffins

  • 2 cups flour
  • 1/2 cup sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1 egg
  • 1 cup milk
  • 1/4 cup canola oil
  • 1 cup chocolate chips
  • peanut butter
  1. Preheat the oven to 400 F.  Line a muffin tray with muffin cups.
  2. Combine the flour, sguar, baking powder, and salt.
  3. Beat in the egg, milk, oil and chocolate chips until just combined.
  4. Scoop half the mixture into the muffin cups.
  5. Put a teaspoon of peanut butter in each half filled cup and then cover with the remaining batter.
  6. Bake for about 20 minutes.

Dark Chocolate Chili Cookies

  • 1 cup pecans, chopped
  • 2 cups flour
  • 1 tsp baking powder
  • 3/4 cup packed brown sugar
  • 3/4 cup softened butter
  • 2 eggs
  • 1/4 tsp ancho chili powder
  • 1 tsp vanilla
  • 4 oz. dark chocolate chopped
  1. Preheat the oven to 350 F.  Line a baking sheet with parchment paper.
  2. Combine the pecans, flour, baking powder, and brown sugar.  Stir in the chili powder.
  3. Mix in the butter, eggs, vanilla and chocolate.
  4. Scoop onto the baking sheet.  Bake about 13 to 16 minutes.

Chocolate Chip Muffins

  • 2 cups flour
  • 1/2 cup sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1 egg
  • 1 cup milk
  • 1/4 cup canola oil
  • 1 cup chocolate chips
  1. Preheat the oven to 400 F and line a muffin tin with cups.
  2. Combine the flour, sugar, baking powder, and salt.  Stir in the remaining ingredients until just combined.
  3. Scoop into the cups and bake for about 20 minutes.

Coconut Banana Loaf

  • bread crumbs
  • 3/4 cup sugar
  • 2 tsp vanilla
  • 2 ripe bananas, mashed
  • 1/4 cup butter,melted
  • 3/4 cup flour
  • 1 tsp baking soda
  • 1 egg
  • 1 1/2 cups shredded coconut
  • 1/2 cup chocolate chips
  • chopped pecans
  • sesame seeds
  1. Preheat the oven to 350 F.
  2. Grease a loaf pan and sprinkle the bottom and sides with the breadcrumbs, shaking out the excess.
  3. Combine the sugar, vanilla, bananas, and butter. Mix well.
  4. Stir in the flour, baking soda, egg, coconut and chocolate chips.
  5. Spread into the pan.  Sprinkle the top with pecans and the seeds.  Press them into the loaf.
  6. Bake for about 50 to 55 minutes.
  7. Cool on a rack.

Not So Fluffy Pancakes

  • 1 1/2 cups flour
  • 2 tbsp sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1 egg, beaten
  • 2 cups milk
  • 2 tbsp canola oil
  1. Combine all the ingredients and stir until just combined.
  2. Pan fry in butter on both sides.
  3. Serve with maple syrup.

Chocolate Chocolate Chips Muffins

  • 2 eggs, beaten
  • 1/2 cup canola oil
  • 1 cup milk
  • 1 tsp vanilla
  • 1 3/4 cups flour
  • 1/2 cup sugar
  • 1/4 cup cocoa
  • 1/2 tsp salt
  • 3/4 cup chocolate chips
  1. Preheat the oven to 400 F. Line a muffin tin with cups.
  2. Combine the eggs, oil, milk, and vanilla.
  3. Stir in the flour, sugar, cocoa, salt, and chips.  Mix well.
  4. Spoon into the pan and bake about 20 minutes.

Lemon Tea Muffins

  • 1 cup flour
  • sugar
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 2 eggs
  • lemon juice
  • butter
  1. Preheat the oven to 375 F and grease a muffin tray.
  2. Combine the flour, 1/2 cup sugar, the baking powder, and the salt.
  3. Mix in the eggs, 1/2 cup lemon juice, and 1/4 cup melted butter.
  4. Stir until just blended.
  5. Spoon into the muffin tray and bake for about 18 minutes.
  6. Meanwhile combine 1 tbsp lemon juice with 3 tbsp melted butter.
  7. Remove the muffins from the oven and then remove from the tray.
  8. Dip the muffins in the butter mixture and then dip in some more granulated sugar.

Brownie Bran Muffins

  • 2 cups flour
  • 5 tsp baking powder
  • 1/2 tsp salt
  • 1 scant cup sugar
  • 2/3 cup cocoa powder
  • 1 cup bran
  • 2 eggs, beaten
  • 1 cup milk
  • 1 tsp vanilla
  • 2/3 cup canola oil
  1. Preheat the oven to 350 F and line a muffin tin with paper cups.
  2. Combine the flour, baking powder, salt, sugar, cocoa, and bran. 
  3. Mix in the remaining ungredients until just combined.  Spoon into the cups.  Bake about 20 to 25 minutes. 

Peanut Butter Bread

  • 2 cups flour
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1/2 cup smooth peanut butter
  • 1/2 cup sugar
  • 2 eggs
  • 1 cup milk
  1. Preheat the oven to 350 and line a loaf pan with tin foil.
  2. Combine all the ingredients and stir well.
  3. Pour into the prepared pan and back for 50 to 60 minutes.
  4. Cool on a rack.
