Turkey Burgers

  • 1 lb ground turkey
  • 1/2 cup panko
  • 1 scallion, minced
  • 2 tsp worcestershire sauce
  • 1 egg
  • the juice of half a lemon
  • 1 tsp kosher salt
  • cracked pepper
  • 1/2 tsp cayenne
  • ciabatta, toasted
  • lettuce
  • sliced pickles
  • mayonnaise
  • mustard
  • blue cheese, crumbled
  1. Heat the grill.
  2. Combine the turkey with the panko, scallion, worcesterwhire, egg, lemon juice, salt, pepper, and cayenne.
  3. Mix well and form into 4 patties.
  4. Grill until cooked.
  5. Meanwhile take the toasted bread, and spread with mayo and mustard.  Add the remaining ingredients.  Lay the patties on top.
  6. Serve.

Cajun Burgers

  • 1 lb ground beef
  • 1 jalapeno, minced
  • 3 garlic cloves, minced
  • 1 scallion, minced
  • 1 tsp cumin
  • 1 tsp dry oregano
  • 1/4 tsp chili flakes
  • 1 tsp kosher salt
  • buns, mayo, mustard, lettuce, pickles
  1. Combine the jalapeno, garlic, scallions, cumin, oregano, chili flakes, and salt.
  2. Mix in the ground beef.  Divide into 4 patties.
  3. Grill until cooked.
  4. Serve on the buns with the mayo, mustard, lettuce, and pickles.

Asian Pork Burgers

  • 1 lb lean ground pork
  • 3 tbsp chopped chives
  • 2 cloves garlic, sliced
  • 1" ginger, peeled, minced
  • 4 tsp soy sauce
  • 1 egg
  • 2 tbsp flour
  • 2 tsp milk
  • 1/2 tsp chili flakes
  • buns
  • mayonnaise
  • hoisin sauce
  • arugula
  1. Combine the chives, garlic, ginger, soy sauce, egg, flour, milk, and chili flakes.  Mix well.
  2. Mix in the pork and form into 4 patties.
  3. Grill until cooked.
  4. Serve on the buns with mayonnaise and a little hoisin sauce and arugula.

Turkey Bacon Burgers

  • 1/3 cup mayonnaise
  • 1 scallion, minced
  • 3 tbsp dill, minced
  • 1 canned chipotle in adobo, minced
  • 1 tsp salt
  • cracked pepper
  • 1 1/4 lb ground turkey meat
  • buns
  • pepper jack
  • dijon
  • lettuce
  • bacon
  1. Fry 1 slice of bacon per person.
  2. Meanwhile, combine the mayonnaise, scallion, dill, chipotle, and the turkey meat.
  3. Season with the salt and cracked pepper.
  4. Form into 4 patties.
  5. Grill.
  6. Serve on buns with mayonnaise, mustard, and lettuce, and the bacon.  Top the burgers with sliced pepper jack cheese.

Dill Burgers

  • 1 lb lean ground beef
  • 3 tbsp buttermilk
  • 3 tbsp minced dill
  • 1 tsp salt
  • cracked pepper
  • sliced tomato
  • cheese
  • bacon
  • mayonnaise
  • dijon
  • buns
  • lettuce
  • mushrooms, sliced
  1. Cook 2 slices bacon until crisp.  Set aside.
  2. Combine the beef, buttermilk, dill, salt, and cracked pepper.  Form into 4 patties.
  3. Saute enough sliced mushrooms to sit nicely on the burgers in the bacon grease until tender.  Set aside.
  4. Grill the patties until cooked.  Melt the cheese on top.
  5. Set the patties on toasted buns with mayonnaise, dijon, the bacon, the mushrooms, lettuce, and sliced tomato. 

Lamb Burgers with Harissa Aioli

  • 1 cup mayonnaise
  • 1/2 tsp ground cumin
  • 1/2 tsp cayenne
  • 3 garlic cloves, minced
  • 1 1/2 tsp lemon juice
  • 1 tsp red wine vinegar
  • 1/2 tsp dijon
  • salt and pepper
  • 1 tbsp olive oil
  • 1 shallot, minced
  • 1 lb ground lamb
  • 1/4 cup parsley, minced
  • 2 tbsp pine nuts
  • 1 tsp paprika
  • 1/4 tsp chili flackes
  • pinch ground cloves
  • 1/2 tbsp coarse sea salt
  • cracked pepper
  • buns
  • lettuce, sliced
  • tomato, sliced
  1. Combine the mayonnaise, cumin, cayenne, 2 garlic cloves, lemon juice, vinegar and dijon.  Season with salt and pepper.  Chill.
  2. Heat the olive oil in a skillet and saute the shallot with 1 garlic clove until tender.  Cool.
  3. Combine the shallot with the lamb, parsley, pine nuts, paprika, chili flakes, cloves, coarse salt, and cracked pepper.
  4. Form into 4 burger patties.  Heat the grill.
  5. Grill the patties until cooked but not dry.
  6. Toast the buns and spread with the aioli.  Top with the lettuce and tomato.  Lay the pattie on top.  Serve.

Mushroom Swiss Burgers

  • 1 egg
  • 1/2 cup panko
  • 1 scallion, minced
  • 2 tbsp worcestershire sauce
  • the juice of half a lemon
  • salt
  • 1/2 tsp cayenne
  • 1 lb lean ground beef
  • swiss cheese, sliced
  • 1/4 lb mushrooms, sliced
  • olive oil
  • mayonnaise
  • dijon
  • buns
  1. Combine the egg, panko, scallions, worcestershire sauce, lemon, 1 tsp salt, cayenne and ground beef.
  2. Form into 4 patties.
  3. Grill the patties.
  4. Meanwhile heat the oil in a skillet on high heat and saute the mushrooms.  Season with a little salt and cracked pepper.
  5. Melt the cheese on the patties.
  6. Spread the mayonnaise and dijon on the buns.  Top with the patties, and then the mushrooms.  Serve.

Beef Burgers au Poivre

  • 1 lb lean ground beef
  • 1 egg
  • 3 tbsp panko
  • 1 tsp salt
  • 2 garlic cloves, minced
  • cracked pepper
  • cognac
  • mayonnaise
  • 4 slices swiss cheese
  • dijon
  • 1 plum tomato
  • lettuce
  • 4 buns
  1. Combine the beef, egg, panko, salt, and garlic.  Form into 4 patties.
  2. Roll in cracked pepper.  Sprinkle each patty with 1 tsp cognac.
  3. Let satnd at room temperature for 30 minutes.
  4. Heat the grill.
  5. Cook the burgers on the grill, on both sides.  In the last minutes, melt the cheese on the patties.
  6. Spread mayonnaise and dijon on the buns and then top with the lettuce and sliced tomato. Lay the patties on top.  Serve.

Cheeseburger

  • 1 lb lean ground beef
  • 1 scallion, minced
  • 1/2 cup milk
  • 1/2 tsp salt
  • 1/2 tsp onion salt
  • 1 tsp worchestershire sauce
  • 1/2 tsp pepper
  • 4 slices cheddar cheese
  • 4 buns
  • lettuce
  • 1 tomato, sliced
  • mayonnaise
  • mustard
  • pickles, sliced
  1. Combine the beef, scallion, milk, salt, onion salt, worchestershire sauce, and pepper.
  2. Form into 4 patties.
  3. Grill until cooked but still juicy.  In the last minute, open the grill and lay the cheddar on top of the patties so it begins to melt.
  4. Spread the mayonnaise and mustard on the buns.  Top with the tomato, lettuce, a the sliced pickle. 
  5. Lay the pattie on top.  Serve.

Turkey Bacon Burgers

  • 1 scallion, minced
  • 2 garlic cloves, minced
  • 1 lb turkey meat, ground
  • 1 tbsp bread crumbs
  • 1 tsp sea salt
  • 1/2 tsp cracked pepper
  • 1 tsp dry basil
  • 4 slices bacon
  • 4 buns
  • mayonnaise
  • lettuce
  • tomato
  • spicy mustard
  • 4 slices monterey jack
  1. Combine the scallion, garlic, turkey, bread crumbs, salt, pepper, and basil.
  2. Mix well and form into 4 patties.
  3. Grill until done.
  4. Meanwhile fry 4 slices of bacon.  Drain on paper towel.
  5. Slice the buns and place mayonnaise, spicy mustard, lettuce, tomato, and a sprinkle of salt on each one.
  6. In the last minute of cooking, open up the grill and lay the cheese on top of the patties to melt.
  7. Place the bacon on the bun and then top with the burger.  Serve.
