Kale and Arugula Salad
- 1 tbsp sesame seeds
- 2 cups kale leaves,washed, and chopped
- 1/8 tsp kosher salt
- 1 avocado, diced
- the juice of half a lime
- 1 cup arugula leaves
- 1 tbsp cilantro, diced
- 1/2 tomato, diced
- 6 green olives, minced
- Toast the sesame seeds briefly and place in a large bowl. Add the tomato, salt, and kale.
- Knead the kale with the salt until wilted.
- Toss in the remaining ingredients.
- Serve.
a nice change from your average salad. very good
