Soba Salad
- 1 tsp sesame oil
- 3 tbsp light soy sauce
- 1 tbsp rice vinegar
- 1 tsp brown sugar
- 1/2 lb soba noodles, cooked in salted water, drained, cooled
- 1/3 of a cucumber, julienned
- 2 tbsp chives, minced
- 1 chili pepper, seeded, minced
- 1 tbsp sesame seeds
- Combine the sesame oil, soy sauce, rice vinegar, and brown sugar. Mix well. Set aside.
- Combine the noodles, cucumber, chives, chili pepper, and then toss with some of the sauce.
- Sprinkle on the sesame seeds. Serve.
a nice way to use up extra soba noodles. a good light lunch
