Tangy Salmon Steaks
- 2 salmon steaks
- salt and pepper
- 1/2 cup white wine
- 2 scallions, minced
- juice of half a lemon
- pinch of powdered ginger
- 1/4 cup butter, melted
- Lightly season the steaks with salt and pepper.
- Combine the wine and the scallions in a small saucepan. Bring it to a boil, then lower the heat and reduce the wine.
- Grill the salmon, basting with the butter.
- Once the salmon is flaky, add the lemon juice, and pepper to the wine. Check seasoning, and add salt and pepper if necessary to the wine.
- Serve the steaks with the reduced wine.
