Lime Coconut Rice
- 1 cup rice
- 1 cup coconut milk
- 3/4 cup chicken stock
- 1/4 tsp salt
- the zest of 1 lime
- Combine the coconut milk and the chicken stock in a saucepan.
- Stir in the rice and the salt and bring to a simmer.
- Cover and cook on very low fo 15 minutes.
- Turn off the heat and let stand 5 minutes.
- Stir in the lime zest. Serve.
