Barley Pilaf
- 2 tbsp butter
- 1 scallion, minced
- 2 chicken oxo cubes
- 1/2 tsp celery salt
- 1/2 tsp pepper
- 2 cups boiling water
- 2/3 cup raw pearl barley
- 2 tbsp minced parsley
- Heat the oven to 325 F.
- In a 1 quart casserole dish, combine all the ingredients except the parsley.
- Cover and bake 50 minutes to 1 hour.
- Stir in the parsley.
- Serve.
