Oatmeal Chocolate Chip Muffins

  • 1/2 cup canola oil
  • 1 cup lightly packed brown sugar
  • 1 egg
  • 1 cup buttermilk
  • 2 cups flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp vanilla
  • 1 cup oats
  • 3/4 cup chocolate chips
  1. Preheat the oven to 400 F.
  2. Line a muffin tray with muffin cups and spray them with cooking spray.
  3. Combine the canola oil, brown sugar, egg, vanilla, and buttermilk.  Mix well.
  4. Combine the flour, baking soda, baking powder, salt, chocolate chips,and oats.
  5. Mix together until just blended.
  6. Spoon into the muffin cups.
  7. Bake about 25 minutes.

    nice. more moist than your average oat muffin

    i don’t have buttermilk. what can i substuitute in for it????
    any ideas?

    mixing some milk with a tsp or so of vinegar works alright as a substitute for buttermilk
