Asian Short Ribs

  • 4 lb beef short ribs, cut into sections
  • 3/4 cup tamari
  • 3 tbsp rice wine vinegar
  • the juice of half a lemon
  • 1 1/2" ginger, peeled, minced
  • 4 cloves garlic, minced
  • 1 shallot, minced
  • 2 cups chicken stock
  • 2 cups water
  • 1/4 cup brown sugar
  • 1 tsp chili flakes
  • sea salt
  • cracked pepper
  • 2 tbsp orange juice
  • 2 tbsp hoisin sauce
  • the juice of half a lime
  1. Preheat the oven to 350 F.
  2. In a large oven proof pot combine the soy sauce, vinegar, garlic, lemon, ginger, chicken stock, water, brown sugar, shallot, chili flakes, orange juice.  Mix well.  Add the short ribs and season with salt and pepper.
  3. Cover and place in the oven for 3 hours.
  4. Remove from the oven and take out the ribs.  Bring the liquid to a boil and skim off the fat.  Boil for 20 minutes.
  5. Stir in the hoisin and lime juice.  Check seasoning.  Return the ribs and cover.  Simmer for 10 minutes.  Serve.

Keema

  • 1 tbsp canola oil
  • 1/2 onion, minced
  • 1 lb lean ground beef
  • salt
  • cracked pepper
  • 3 cloves garlic, sliced
  • 3 ripe tomatoes, diced
  • 1" ginger, minced
  • 2 jalapenos, sliced
  • 1/2 tsp curry powder
  • 1/4 tsp turmeric
  • 1/2 tsp cumin
  • 1 tsp coriander
  • 1 1/2 cup frozen peas
  • the juice of 1 lemon
  1. Heat the oil in a dutch oven.  Saute the onion until tender.
  2. Add the beef and saute until browned.  Season with salt and pepper.
  3. Add the garlic, tomatoes, ginger, and jalapenos.  Stir well.
  4. Stir in the spices and then add the peas.  Stir 5 minutes.
  5. Stir in the lemon juice.
  6. Season to taste.
  7. Serve with raita and with bhakharis or puris.

Beer Steak

  • 2 steaks
  • 1 bottle dark beer
  • 2 tbsp honey
  • 1 tbsp soy sauce
  • 1 tsp powdered ginger
  • sea salt and cracked pepper
  1. Combine the honey, soy sauce, and ginger.  Rub into the steaks.
  2. Pour on the beer and chill overnight.
  3. Drain off the marinade and season with salt and pepper.
  4. Grill until cooked.  Serve.

Red Wine Short Ribs

  • 3 lb beef short ribs, cut in short sections
  • sea salt and cracked pepper
  • 1 tbsp canola oil
  • 1 onion, mnced
  • 2 carrots, peeled, minced
  • 1/4 cup chopped parsley
  • 2 bay leaves
  • 2 cups beef stock
  • 1 cup red wine
  1. Preheat the oven to 325 F.
  2. Season the ribs generously with salt and pepper.
  3. Heat the oil in an oven proof dutch oven and then brown the ribs in batches on all sides for 6 minutes.
  4. Remove the ribs and then add the onion, and carrots to the pot.  Saute until tender.
  5. Add the parsley and bay leaves.
  6. Stir in the beef stock and red wine.  Bring to a boil.
  7. Return the ribs to the pot and return to a simmer.  Cover and place in the oven.  Cook 3 hours.
  8. Check the seasoning.  Serve.

Thai Beef Noodle Bowl

  • dried rice vermicelli
  • lettuce, sliced in a chiffonade
  • bean sprouts
  • 3/4 lb beef, thinly sliced
  • 3 lemongrass stalks, minced
  • garlic
  • 1 shallot, minced
  • fish sauce
  • sugar
  • 1 thai red chile, minced
  • sea salt and cracked pepper
  • 1 lime
  1. Combine the beef, lemongrass, 6 cloves garlic, sliced, 1 1/2 tbsp fish sauce, 1/2 tsp sugar, and some cracked pepper.  Chill 4 hours.
  2. Divide the lettuce and bean sprouts between bowls.
  3. Combine the juice of the lime, 1 clove garlic, minced, the chili, minced, 1/4 cup fish sauce, 3 tbsp sugar, and 1/3 cup water. Mix well.  Set aside.
  4. Soak the rice noodles in hot water.  Drain.  Divide between bowls.
  5. Meanwhile heat 1 tbsp of peanut oil in a large skillet.  Add the shallot and saute until tender.
  6. Pour in the beef and marinade and saute for 2 to 3 minutes.  Season with salt.  Serve on top of the noodles.  Serve with the sauce.

Steak with BBQ Sauce

  • 2 steaks
  • kosher salt and cracked pepper
  • 1/4 cup ketchup
  • 1/4 cup water
  • 1 tbsp vinegar
  • 1 tsp worcestershire sauce
  • 1/4 tsp tabasco
  • 1/2 tsp celery salt
  1. In a saucepan combine the water, ketchup, vinegar, worcestershire, tabasco, and celery salt.  stir in 1/4 tsp salt.  Stir well.
  2. Bring to a boil and then simmer on very low heat for 10 minutes.
  3. Meanwhile, season two steaks with kosher salt and cracked pepper.  Pan fry in olive oil.
  4. Serve with the sauce poured on.

Asian Flavoured Steak

  • 1 scallion, minced
  • 4 cloves garlic, minced
  • olive oil
  • fish sauce
  • brown sugar
  • 2 tbsp soy sauce
  • 1 tbsp curry powder
  • the juice of 1 lemon
  • 1/2 tsp tabasco
  • 2 steaks
  • cracked pepper
  • kosher salt
  1. Combine 3 garlic cloves, 2 tbsp fish sauce, 3 tbsp brown sugar, the soy sauce, and the curry powder.  Add about 3 tbsp of olive oil and mix well.  Rub into the steaks and chill overnight.
  2. Combine the lemon juice, 1 tsp fish sauce, 1 tsp brown sugar, 1 scallion, minced, and the tabasco sauce.  Set aside.
  3. Remove the steak from the marinade and scrape off the garlic.
  4. Season with pepper and kosher salt.
  5. Pan fry in olive oil.
  6. Serve with the sauce.

Paprika Rubbed Steak

  • olive oil
  • sea salt
  • cracked pepper
  • 2 steaks
  • 1 tsp paprika
  • 1 tsp sugar
  • 1/2 tsp garlic powder
  • 1/2 tsp dry oregano
  • 1/2 tsp ground ginger
  1. Drizzle 2 steaks with olive oil and then season with salt and pepper generously. 
  2. Sprinkle both sides with the spices and then let sit at room temperature for 30 minutes.
  3. Pan fry in olive oil.
  4. Serve.

Garlic Chili Beef with Rice

  • 2 tsp soy sauce
  • 2 tsp cornstarch
  • 1 lb beef, sliced thing
  • 1/4 tsp chinese 5 spice
  • 1 tbsp olive oil
  • sea salt and cracked pepper
  • 5 cloves garlic, sliced
  • 1 jalapeno, sliced
  • 1 tbsp sambal oelek
  • 2 tbsp hoisin sauce
  • 2 tbsp minced basil
  • white rice, steamed
  1. Combine the soy sauce, cornstarch, beef, and chinese 5 spice.  Let stand 10 minutes, after mixing well.
  2. Heat the olive oil in a dutch oven or wok.
  3. Add the garlic and jalapeno and saute until fragrant.
  4. Add the beef and saute 2 minutes.  Season with salt and pepper.
  5. Stir in the hoisin sauce and the sambal oelek and cook 1 minute longer.
  6. Stir in the basil and serve with the rice.

Dill Burgers

  • 1 lb lean ground beef
  • 3 tbsp buttermilk
  • 3 tbsp minced dill
  • 1 tsp salt
  • cracked pepper
  • sliced tomato
  • cheese
  • bacon
  • mayonnaise
  • dijon
  • buns
  • lettuce
  • mushrooms, sliced
  1. Cook 2 slices bacon until crisp.  Set aside.
  2. Combine the beef, buttermilk, dill, salt, and cracked pepper.  Form into 4 patties.
  3. Saute enough sliced mushrooms to sit nicely on the burgers in the bacon grease until tender.  Set aside.
  4. Grill the patties until cooked.  Melt the cheese on top.
  5. Set the patties on toasted buns with mayonnaise, dijon, the bacon, the mushrooms, lettuce, and sliced tomato.
