Strawberry Muffins

  • 1 1/2 cups flour
  • 1/4 cup sugar
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 egg
  • 1/2 tsp vanilla
  • 1/4 cup butter, melted
  • 1 cup strawberry low fat yogurt
  • 1/4 cup milk
  • strawberry jam
  1. Preheat the ovent o 425.  Line a muffin tin with cupcake liners and spray their insides with a cooking spray.
  2. Combine the flour, sugar, baking powder, soda, and salt.
  3. Add the egg, vanilla, butter, yogurt, and milk and stir until just combined.
  4. Spoon half the mixture into the prepared tray.
  5. Add a teaspoon of jam to each muffin.  Top up with the rest of the batter.
  6. Bake about 18 to 20 minutes.

Classic Chocolate Chip Muffins

  • 1 1/2 cups flour
  • 1/2 cup sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 egg
  • 1/2 cup milk
  • 1/4 cup canola oil
  • 3/4 cup chocolate chips
  1. Preheat the oven to 400 F.  Line a muffin tray with cupcake papers and then spray their insides with cooking spray.
  2. Combine the flour, sugar, baking powder, and salt.
  3. Stir in the egg, milk, canola oil, and chocolate chips until just combined.
  4. Spoon into the muffin tray.
  5. bake about 20 to 22 minutes.

Oreo Cupcakes

  • 1 2/3 cups flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup butter, softened
  • 1 cup sugar
  • 2 eggs
  • 1 tsp vanilla
  • 3/4 cup milk
  • enough oreos to make 1 cup crushed
  1. Preheat the oven to 350 F.
  2. Combine the flour, baking powder, and salt.
  3. Cream the butter with the sugar and then beat in the eggs and vanilla.
  4. Stir in the flour mixture and the milk.
  5. Crush enough whole oreos to make 1 cup and then fold them in.
  6. Spoon into a cuplined muffin tray.
  7. Bake about 25 minutes.

Chocolate Chip Peanut Butter Muffins

  • 2 cups flour
  • 1/2 cup sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1 egg
  • 1 cup milk
  • 1/4 cup canola oil
  • 1 cup chocolate chips
  • peanut butter
  1. Preheat the oven to 400 F.  Line a muffin tray with muffin cups.
  2. Combine the flour, sguar, baking powder, and salt.
  3. Beat in the egg, milk, oil and chocolate chips until just combined.
  4. Scoop half the mixture into the muffin cups.
  5. Put a teaspoon of peanut butter in each half filled cup and then cover with the remaining batter.
  6. Bake for about 20 minutes.

Chocolate Chip Muffins

  • 2 cups flour
  • 1/2 cup sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1 egg
  • 1 cup milk
  • 1/4 cup canola oil
  • 1 cup chocolate chips
  1. Preheat the oven to 400 F and line a muffin tin with cups.
  2. Combine the flour, sugar, baking powder, and salt.  Stir in the remaining ingredients until just combined.
  3. Scoop into the cups and bake for about 20 minutes.

Chocolate Chocolate Chips Muffins

  • 2 eggs, beaten
  • 1/2 cup canola oil
  • 1 cup milk
  • 1 tsp vanilla
  • 1 3/4 cups flour
  • 1/2 cup sugar
  • 1/4 cup cocoa
  • 1/2 tsp salt
  • 3/4 cup chocolate chips
  1. Preheat the oven to 400 F. Line a muffin tin with cups.
  2. Combine the eggs, oil, milk, and vanilla.
  3. Stir in the flour, sugar, cocoa, salt, and chips.  Mix well.
  4. Spoon into the pan and bake about 20 minutes.

Extreme Muffins

  • 2 cups flour
  • 2/3 cup sugar
  • 2 tsp baking soda
  • 1/4 tsp cinnamon
  • 1/4 tsp salt
  • 2 cups grated carrots
  • 1/2 chocolate chips
  • 1/2 cup chopped pecans
  • 3/4 cup shredded coconut
  • 1 granny smith apple, peeled, cored, shredded
  • 2 eggs
  • 2/3 cup canola oil
  • 2 tsp vanilla
  1. Preheat the oven to 350 F.  Line a muffin tin.
  2. Combine the flour, sugar, baking soda, cinnamon, and salt.
  3. Stir in the carrots, chocolate, pecans, coconut and apple.
  4. Whisk together the eggs, oil, and vanilla.  Combine until just blended.
  5. Spoon into the cups.
  6. Bake about 30 to 35 minutes.

Lemon Tea Muffins

  • 1 cup flour
  • sugar
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 2 eggs
  • lemon juice
  • butter
  1. Preheat the oven to 375 F and grease a muffin tray.
  2. Combine the flour, 1/2 cup sugar, the baking powder, and the salt.
  3. Mix in the eggs, 1/2 cup lemon juice, and 1/4 cup melted butter.
  4. Stir until just blended.
  5. Spoon into the muffin tray and bake for about 18 minutes.
  6. Meanwhile combine 1 tbsp lemon juice with 3 tbsp melted butter.
  7. Remove the muffins from the oven and then remove from the tray.
  8. Dip the muffins in the butter mixture and then dip in some more granulated sugar.

Brownie Bran Muffins

  • 2 cups flour
  • 5 tsp baking powder
  • 1/2 tsp salt
  • 1 scant cup sugar
  • 2/3 cup cocoa powder
  • 1 cup bran
  • 2 eggs, beaten
  • 1 cup milk
  • 1 tsp vanilla
  • 2/3 cup canola oil
  1. Preheat the oven to 350 F and line a muffin tin with paper cups.
  2. Combine the flour, baking powder, salt, sugar, cocoa, and bran. 
  3. Mix in the remaining ungredients until just combined.  Spoon into the cups.  Bake about 20 to 25 minutes. 

Banana Yogurt Chocolate Muffins

  • 1 2/3 cups flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 cup melted butter
  • 2/3 cup bran
  • 1/2 cup chopped walnuts
  • 1 egg
  • 2 bananas, mashed
  • 6 oz. plain yogurt
  • 1/2 cup packed brown sugar
  • 1 tsp molasses
  1. Preheat the oven to 375 F.
  2. Line a muffin tin with paper liners.
  3. Combine the flour, baking powder, and soda.  Stir in the melted butter until it is all crumbly.  Mix in the bran and the nuts.
  4. Stir in the egg, bananas, yogurt, sugar, and molasses.  Mix until just blended.
  5. Spoon into the pan.
  6. Bake about 25 minutes.
  7. Serve.
