Banana Coconut Bread

  • 2 cups flour
  • 1/4 tsp salt
  • 1 tsp baking soda
  • 1/2 cup melted butter
  • 1 cup lightly packed brown sugar
  • 2 eggs
  • 1 1/2 tsp vanilla
  • 3 tbsp rum
  • 3 bananas, mashed
  • 1/4 tsp cinnamon
  • a pinch of mace
  • a pinch of cloves
  • 3 tbsp milk
  • 1/2 cup walnuts, chopped
  • 3/4 cup shredded coconut
  1. Preheat the oven to 325 F.
  2. Grease a 9 by 5 inch loaf pan.
  3. Combine the flour, salt, and baking soda.  Stir in the butter, sugar, eggs, vanilla.
  4. Stir in the rum, bananas, and the spices.  Mix in the milk and the nuts and the coconut.  Stir well.
  5. Pour into the pan.  Place in the oven and bake about 1 hour.
